So what exactly is a pearl onion? Well, the first thing you’ll notice is their small, round size. Pearl onions range from ¾” to 1-1/4” in diameter. These specialty onions can be white, red or gold, and they are available year-round in most supermarkets. White tends to be the most popular, but you can also find all three colors mixed together in one package. This makes for a very colorful presentation at your next dinner party. The cipolline ‘Borettane’ is an Italian pearl onion known for its flat, saucer-like shape. Previously produced only in Italy, these unusual and elegant onions are now grown on our farms.
